‘38% of the world’s population now has Fatty liver*: Why does this matter and what has diet to do with it?’
In fact, the situation is even worse as here we are only talking about ‘non-alcoholic’ fatty liver (NAFLD). A pandemic sweeping the world that is affecting younger and younger people. This is important because NAFLD impacts significantly on mortality and morbidity particularly via cardiovascular disease. NAFLD is strongly associated with some other pandemics; central obesity, high triglyceride levels and type 2 diabetes. We will be discussing how poor diet fits into this along with the idea we are ‘overfed and undernourished’. Finally, I will be showing how an improved diet has improved not just liver function for my patients but also cardiovascular risk and T2 diabetes.

About Dr David Unwin
Dr. David Unwin, MD, is an award-winning general practitioner (or family doctor) known for pioneering the low-carb approach in the UK. Through the years, Dr. Unwin has been highly recognized for his work within his field.
In 2015, Dr. Unwin was made a UK Royal College of General Practitioners expert clinical advisor in 2015 for his dedicated efforts within the areas of patient communication and type 2 diabetes.
Then, in 2016, Dr. Unwin won the prestigious NHS Innovator of the Year award for his work with diabetes patients.
From 2017 to 2018, his practice saved £57,000 on drugs for type 2 diabetes, hypertension, and other conditions by offering patients a dietary alternative to medications.
Also in 2018, Dr. Unwin was named the ninth most influential general practitioner in the UK by GP magazine Pulse. Moreover, he is a clinical expert in Diabetes at Fellowship of the UK Royal College of General Practitioners where he was elected as a Fellow back in 2008.
Additionally, Dr. Unwin is the medical advisor at the popular Low Carb Program and is doing his best to spread knowledge about low carb among doctors, dietitians, and nurses.
Dr. Unwin has also written several peer-reviewed papers to strengthen the science behind low-carb diets.

to Women’s Health’
This session will cover the principles and practical aspects of using a Functional and Integrative approach in the management and support of women’s health conditions. Dr Sally Moorcroft will draw on her 20 years in clinical practice to review the root causes of hormone imbalance and take a deep dive into Peri-menopause and Menopause; PCOS and Endometriosis. Including cases from clinical practice, the session will review useful blood and functional medicine testing; how to create a treatment plan in complex hormone conditions and will explore the current research and evidence base for nutritional medicine and supplements, herbal medicine and integrative approaches including acupuncture, yoga and lifestyle medicine.
About Dr Sally Moorcroft
Dr Sally Moorcroft, brings over two decades of experience in Integrative and Functional Medicine, with a particular focus on Herbal Medicine and Women’s Health.
Clinical Director and Co-Founder of the Northern Centre of Integrative and Functional Medicine (NCIFM), Lincolnshire, UK, and Co-founder of a range of organic herbal products, Dr Sally’s Botanicals, she is also core tutor at NCIM, Bristol on their Master’s Level Diploma in Integrative Healthcare.
Her resume includes a blend of functional medicine, nutrition, herbal medicine, homeopathy, acupuncture, and bio-identical hormone therapy. With a BSc (Hons) in Herbal Medicine, and five years of postgraduate training in medical homeopathy, additional training in TCM, medical acupuncture and aromatherapy.

‘Hidden in Plain Sight: Thiamine Deficiency as a Stealth Cause of Functional Gut Disorders’
Thiamine (vitamin B1) deficiency is a critical yet frequently overlooked driver of chronic gastrointestinal dysfunction, and can manifest as SIBO, IBS, hypochlorhydria, gastroparesis, and intestinal inflammation. A key mechanism behind this lies in thiamine’s involvement in acetylcholine signaling, which facilitates communication between the brain and digestive organs.
Emerging evidence suggests that a localized, gut-specific thiamine deficiency can occur, often undetectable on standard functional lab tests. This presentation will examine research—spanning early Japanese and Chinese studies to modern clinical findings—demonstrating how a lack of this essential nutrient can contribute to functional gut disorders and how targeted thiamine derivatives can help to restore gastrointestinal function. Understanding these mechanisms opens new therapeutic avenues, particularly for patients unresponsive to conventional treatments.
About Elliot Overton
Elliot is a nutritionist located in France. His primary research focus is the clinical application of high-dose thiamine (vitamin B1). Elliot frequently lectures and speaks at educational events aimed at practitioners, helping to broaden the understanding and application of thiamine in therapeutic settings.
He also runs the YouTube channel “EONutrition” and manages the website “thiamineprotocols.com.” Furthermore, he is cofounder and CEO of Objective Nutrients, a nutraceutical company specializing in excipient-free thiamine derivatives and related supplements. Elliot’s overarching aim is to increase awareness about the benefits of thiamine through education and advocacy, striving to make this knowledge accessible to both practitioners and the general public.
